Steak with creamy gratin...

This weeks recipe is... Steak with creamy mushroom gratin with roasted sweet potatoes! 




I've adapted this slightly from the New Weight Watchers Book 'Cook it your way!' (which FYI is in the Easter Bunny Winners pack! I KNOW!!!) They've used butternut squash chips so in total its only 6PP per portion but I treated my guests to sweet potatoes! The recipe is 24pp in total ... 36PP for using sweet potatoes... and it serves 4 people... and when you get in the mood for a steak, this is a easy and flavourful way to do it! 



Whats in it?

400g steak - 16PP (4PP per portion)

400g sweet potatoes - 12PP (3PP per portion)
   If you want to save 3PP per serve, roast butternut squash instead...
4 Laughing Blue Cheese triangles - 4PP (1PP per portion)
2 tbsp half fat creme fraiche - 2PP

ZERO HEROS
Spray Oil
Broccoli 
Mushrooms
Yellow pepper (I only did peppers because someone doesn't like mushrooms weird right!?)
Garlic
Paprika
Mustard
Tarragon

Total ProPoints for the recipe - 36PP
Total ProPoints per portion - 9PP

How?


Cut your sweet potato in half, spray lightly with spray oil and season with smoked paprika... Warm up the oven to gas mark 6/200C/180c Fan... They will take about 40 minutes depending on your oven but poke them with a fork, once they're soft they're done...  







Wash and chop your broccoli and pop it in your steamer ready to go... 



Chop your mushrooms...


Spray your pan with low cal oil.. and lightly fry them until they're soft... 


Pop them in a bowl to cool...



In a separate bowl...





Separate your egg... 


Add your 2 tbsp of creme fraiche... 
Tesco Half Fat is the best 'light' one I've come across to date...






A teaspoon of wholegrain mustard... 



add your garlic and tarragon... 



 and give it a good stir... 




Stir your mushrooms into the mix... 



Check your sweet potatoes and pop on your broccoli! 



Using the same pan you did the mushrooms in... seal your steaks on both sides... 



Then on your grill... assemble your steaks with the mushroom mixture on top 
and top each one off with a triangle of Laughing Cow Cheese... 





Pepper version for the awkward guest! 



The pop it under the grill for no more than 5 mins whilst your broccoli is steaming! 




Et voila! Steak with mushroom gratin for 9PP!

Brunch club does 'Brunch Club' ...


So.. Brunch club.. went to... um... Brunch Club... and OH MY!
Lovin Dublin run #LovinBrunch and it was ALL the yums... Tickets were €20...
This was the second Brunch Club they have run and honestly well worth the money! 



First up.. cocktail and beer vouchers at the door! I mean I ask ya! It's like they know me!

 



 Not only was it a 6 Nations weekend
but it was Paddies Weekend and Mothers day so it was all go!


Lots of cupcakes bedecked in the tricolour on every table...

  

Once the drinks were in... it was off to the 'smorgasbord' as my mother would say...
this was NO buffet I tell ya... 


from pastries to smoked salmon and some the nicest brown bread EVER... 







to fruit and cheese for those being... ahem... 'good' 


as well as danish pastries and cinnamon swirls...
there were cream cheese and bacon mini bagels..

   



and of course there were the usuals for a fry... clonakilty pudding and sausages,
bacon, roasted baby tomatoes and mushrooms all for the pick'n'mix fans!

There was also a 'pancake station' that I never even got to see!!! 
So clearly I HAVE to go back again!


   






and if you haven't been to House on Leeson St.. make a visit.. 
and try to sit out the back at the long bar... it's a perfect spot after work for a drink...
