Yummy Atlantic Treasures...


I love to promote Irish products, now more than ever we really need to help the home team out. So when Atlantic Treasures, a company based in Donegal contacted me about trying some of their mackerel range I thought I had to give it a try! Not a single regret. This range is so good, and with us all trying to eat less red meat and these beauties being on our doorstep they're well worth a try if you're a fish fan... So full of flavour that you'll only need half the pack for a substantial meal, bulk them up with salads and veggies and you've got a dinner worthy of instagram... I'm trying out a few recipes with them over the next few weeks but if you spot them definitely give them a try... I've done the SPs per half pack and full pack and although people might think they're a bit high they're full of all the good oils and fats so definitely worth it... Anyone else tried them out? x

John West - Spreadables

These little pots of tuna are SO handy for lunch but a little on the high side for me... John Wests tin of tuna is only 1SP and add a little 'lighter than light' mayo from Aldi and you're all set for a couple of points... your herbs and spices can make a world of difference too! If you're stuck and just fancy tuna these can be handy and you know exactly what you're getting as opposed to anything you might get at a random deli counter... x

I've only spotted these recently in my local Tesco and if you're a fish lover, you're gonna love these... You can microwave them when you're falling in the door hungry after work and the portion sizes are perfect... The garlic and herb version is only 4PP for the WHOLE pack and it's my personal fav! No complaints with the cajun one either!

Tuna Infusions Steam Pots...

These are one of those emergency 'I'M STARVIN!' foods for the cupboard... Steam Pots Tuna Infusions from John West... I tried the Soy and Ginger version and it wasn't for me.. the mushroom couscous was delish but the tune kinda ruined it for me ... but I'm definitely going to try the lemon and thyme one... 

I'm a planner when it comes to meals so when something upsets the plan then I'm all lost! I always have roasted veg in the fridge or oven... I always have salary bits and pieces... So bulking this up was easy... The portion size was good you can kinda judge it by the size of it in my hand but for me they're for emergencies only... If anyone else has tried 'em comment below I'd love to hear what you thought...

Fishy Friday...

Firstly ... TGIF!!! As requested by many... here's the Fish Finger recipe from the latest Weight Watchers Cook book... with my tuppence worth for good measure.... 





What it SHOULD look like when its done... 

WHAT YOU NEED...
 

Now remember not all fish fingers are equal... as per the books, 1 fish finger = 1PP

However... ready for the diet maths... sigh... 

Birdseye Value fish fingers are 3 - 4PP
Birdseye 100% Cod fillet fish fingers are 3 - 5PP
Birdseye Salmon Fish fingers, 1 - 5PP (!)
Asda Omega 3 fish fingers are 3 - 5PP
M&S Cod Fillet Chunky Fish Fingers 1 - 2PP
Sainsburys Basic range 5 - 5PP
Tescos Finest Chunky Cod fingers 2 - 6PP
Tesco Everyday Value Fish Fingers - 1 - 1PP
Tesco Omega 3 Fish Fingers 3 - 4PP
Youngs Fish fingers 3 - 5PP 
Youngs Fish fingers 5 - 6PP

I know... I know... its madness but just keep your eyes peeled...


With the bread roll... if you're going to make a 'sarnie' for your dinner... I don't think the 'Slims' or 'wraps' would cut it for me... its a fish finger sandwich, when I rule the world  batch bread will be compulsory but until then just indulge in the bread and enjoy it... if you're going for ketchup over tartar sauce then you can put those points towards the bread ...  if you're having this for lunch... then spare your points and be smarter with your choices...

Here's the HOW TO... 



The recipe is using 0% Greek Yoghurt for the Tartare Sauce... Personally not a big fan of tartar sauce... I'm all about the ketchup / relish ...

Tartar Sauce is basically mayo with pickles capers and mustard... if you wanted to replace the soft cheese and yoghurt with the Low Fat Mayo from Aldi it would work out a ProPoint lower per sarnie... 



          Tartar Sauce
          1 cup lighter than light mayonnaise
          1/2 cup chopped dill pickles
          1 teaspoon capers, chopped
          2 teaspoons Dijon mustard
          2 teaspoons chopped shallots
          2 Tbsp chopped scallions
          2 teaspoons lemon juice
          6 drops Tabasco sauce or more to taste
          Salt and pepper to taste

          Mix all ingredients together in a bowl.


If you're doing F&H then its 7 PP from your weeklies! 



It states you can add 1PP for some ketchup, I'm a 'Chef Tomato' gal and I LOVE Ballymaloe relish so without the tartar sauce I'm down to 6PP for the roll and fish fingers and ALL the salad...  



Also add all the freebies you love... Beetroot... do not knock it till you try it! Gherkins, spring onion... any zero point salad goodie can be added! 

For a fab zero point salsa, if you're not a tartar person...

          ProPoint Free Salsa

          5 large tomatoes
          1 red onion
          1 red chilli
          coriander (as much as you like... )
          1 clove of garlic

          finely chop all the ingredients and mix together ... season and serve!

For a zero PP ketchup to make yourself... try... 

          0PP Ketchup

          1 onion
          2 garlic cloves
          2 x 400g chopped tomatos
          2 tsp ground cinnamon
          2 tsp celery salt
          2 tsp English mustard
          2 tsp ground white pepper
          4 tbsp artificial sweetener
          9floz/255ml red wine vinegar
          1 tbsp Worcestershire sauce


          Finely chop the onion and crush the garlic... 
          Place all the ingredients into a saucepan and bring to the boil... 
          Reduce the heat and cook gently for 40-45 minutes, stirring occasionally..
          Remove from the heat, season with salt and allow to cool... 
          Blend the tomato mixture in a food processor until smooth... Sieve into a bowl...
          Transfer the ketchup into a sterilised jar... 
          The ketchup will keep for up to 3 weeks in the fridge...

This recipe is fast and delish... and it's a throw back for most of us to when we were kids... so Happy fishing and happy friday! 


Prawn Satay recipe...



Here's the recipe for the Prawn satay as promised from Friday … Part of my ongoing homemade Chinese experiment! 

I LOVE satay.. and a chicken satay from my local Chinese is 18 (EIGHTEEN!!!) ProPoints… and a skewered chicken satay from the starter is 5 PP for ONE! so I had to do something… after many attempts this is the best I've come up with… don't forget to add your rice…  10g = 1 PP

First up you'll need prawns, you can use chicken or beef too… Most of the packs you buy all work out roughly 3 PP for about 12 prawns…  

Birds Eye 280gm pack = 5 PP 
Young's King Prawns 190gm pack = 3 PP 

Frozen 250g bag from Tescos = 3 PP for half the bag 

Get those in the hot wok with a few squirts of spray oil and lash in loads of veg… add some soy sauce, sweet chill sauce and a drop of red wine vinegar… Try a little lemon grass or Chinese five spice if that's your thing… I used red bell peppers, courgettes and red onions all finely chopped… but you can add any veg you like… mushrooms are lovely and will bulk it up too!  


The satay sauce works out at 2 PP and will serve 4

You'll need… 
2 tbsp smooth or crunchy peanut butter

2 tbsp creme fraiche 
(the recipe used coconut milk or evaporated milk but creme fraiche does the exact same job without the extra saturated fat!)

1 tsp canderel 
(I've found this to be optional… it you caramelize your onions it can be sweet enough) 

1 tsp sweet chilli sauce

1 small onion finely chopped

1 clove of garlic crushed 

2 tsp soy sauce

2 tsp lemon juice   

1/2 cup water

Then… 

Combine the onion, garlic, sauces, sugar, lemon juice, peanut butter and water in a small saucepan then bring to the boil. Simmer the mixture for about 5 minutes continuously stirring or until the sauce thickens. Allow it to cool slightly then stir in creme fraiche. You can thin it down with a little more water and then add it to your stir fry. 




Et voila! 



6 PP of prawns and 2 PP of sauce makes a large portion of this for just 4 PP 
just add your rice…  



The lowest ready-made packet satay sauce is from AMOY…
6 PP for the full packet which serves two 
but its full of flavor so you will easily get 3 dinners out of it… 
I found it a little thick so I water it down… Most of the rest are ridiculously high!

Sushi...

I know chinese new year is over and technically Sushi is a japanese thing… but here's the PP for those still counting! These are freshly made with no additives and won't last in our cupboard till 2015! If you like sushi you'll love them… and if you don't try the veggie box to start you off you'll be hooked before you know it … DELISH! 




Hoisin Duck Sushi - 200g pack of 8 its 6 PP
Includes 8 duck maki with carrot, cucumber & hoisin sauce… 
comes with a very cute little bottle of soy sauce & some wasabi… 


Chicken Teriyaki Sushi - 200g pack of 8 its 6 PP
8 chicken maki marinated in Oishii Teriyaki sauce with red pepper & chives… 
again with a very cute little bottle of soy sauce & some wasabi… 


Sushi salad bento box 230g  - 10 PP
Includes 2 fresh salmon nigiri, 3 smoked salmon maki, vermicelli noodle salad… 
soy & sweet chill sauce, wasabi and pickled ginger… very filling for lunch!


Sakana fish sushi box 205g  - 6 PP
Includes 1 salmon nigiri, 1 crabstick nigiri, 2 inside-out smoked salmon maki,
2 inside-out tuna maki with carrot & mayo … 
soy sauce, wasabi & pickled ginger…


Vietnamese Springrolls 140g  - 9 PP
2 cooked prawn & pork spring rolls with ponzo sauce … 
Note: one spring roll is 4 PP but it rounds up to 9 PP if you have em both!

Yasai Vegetarian Sushi 180g  - 6 PP
1 tamago nigiri, 1 sweet tofu nigiri, 1 red pepper nigiri, 
4 tofu maki with carrot & wakame, Soy sauce, pickled ginger and wasabi too! 


Something fishy...

You all know my eternal quest to make lunch less boring.. I'm a big tuna fan... but have only recently spotted these little 'infusion' beauties.. (its also shark week so its gonna get a lil' fishy in here!)

With your 'Pat-the-baker' slimbos, a wrap or feck it .. bread! Add loads of fat free salad stuff and you'll have a very flavourful lunchbox! Just something to spice things up before we all face the winter soup-a-thon!
