Breakfast pies

So a little indulgent but hey... sometimes you've gotta be nice to yourself... 

If you read my post on Mayfield Eatery and the lush brunch you get there... then you spotted my ranting about their breakfast pies... dear god... I'm drooling as I type... 

Breakfast .... in a pie people!! So, on my never ending list of 'to do' blog posts I decided to try to make one a little bit more weight watchers friendly... and when I spotted these mini savoury pastry cases in M&S I knew it was time... 

There are loads of variations you can do with these so I'll just give you my version, I was doing brunch for 4 and I was the only one on the points wagon ...  but I'll add in the swaps you could make along the way ... but to be honest it's make it up as you like it... 

For the recipe in total...

Pastry cases - 12 PP
4 eggs - 8 PP
4 Sausages - 8 PP
5 bacon medallions - 2 PP
Baby tomatoes - 0 PP
Mushrooms - 0 PP

TOTAL -  30 PP (5 PP per pie) 


These cases are 2PP each... They're already blind baked so it's stick em on some foil whilst you grill your bacon and sausages... 





Alternatives for the bacon...
Normal rashers - 1 for 1 PP 
Turkey Rashers - 2 for 1PP
Lardons (Lidl 60g) - 4 PP
Lidl Bacon Medallions - 7 for 6 PP

Again with the sausages it depends what you're prepared to use points wise... 
Hodgkins Low Fat Sausages - 2 PP each
Tesco Healthy Living - 2 PP each 
Weight Watchers Sausages - 6 for 4 PP



Whisk your eggs and season... you can reduced the ProPoints value by using only 2 whole eggs and 2 egg whites... and really whisk it up so its light and fluffy... to be honest you could make it with egg whites and just add a touch of mustard to colour and it would be just as nice! (I do that with my omelettes!)


Now assemble... don't over load them or you'll miss out on the eggy bit! Oh and pour the egg in gently and into the oven with them! 



Cook for 20 - 30 mins.. test that the egg has cook through... 
bigger deeper cases will need longer... 


And ta da! Jamie Ramsey eat your heart out... they look really professional and super fancy and there's very little washing up!


Load your plate with zero ProPoint tomatoes and mushrooms or chuck a salad on the side... you're looking at 10PP for brunch for two of them ... which if you really do have it for breakfast and lunch, leaves you with lots of points for the rest of the day or a great save if you went a bit mad the night before...  



As I said I used the full rashers and fancy sausages, I had guests ... so its the full 5 PP per pie but with some tweaking or if you go veggie, you'll have a filling brunch for very little ...
