New soup range from Knorr

A new range of soups from Knorr that you'll find in the chilled section of the supermarkets. Each bottle is 450ml so you'd get two lunches from one... I've done the SP for both... anyone tried them out? x

Avonmore Soups...

New range of flavours from Avonmore out at the moment! All gluten free and full of yummy flavours... Each tub is 400g so the whole thing for lunch or half the tub with a sandwich on those cold days! Again, it's just to mix it up with the batch cooking at the moment... trying to keep soup interesting can be a big challenge! The odd purchase can mix it up a bit! Anyone tried them out? x

More soups from Dunnes today, these are a selection of the ready made soups they have out at the moment. I've tried the chestnut mushroom one and it's gorgeous! Something I'd never make a bowl of just for me... I got two lunches out of the 500g tub! Sadly, they can't be frozen, but so nice for a change! Definitely have the spiced parsnip one on my radar! SmartPoints are for the half the tub, 250g and the full 500g tub. There's such a big selection, definitely something for everyone! Anyone else tried them out? x

Low Cal Chicken Quick Soup...

Now I know the summer is upon us but sometimes things like this can really fill a gap until you can get your act together ( I clearly mean get MY act together!) I find if I come home hungry and nothing is prepared I tend to munch on bread and bits of cheese and they never see the tracker! I'm also a fan of bovril for these emergencies! While I'm blowing it to cool it down I'm able to chop me veggies and get my arse in gear! Picked these up in Dunnes!

Glorious Soups

I'm a big fan of making my own soup, I love the combinations I 'accidentally come up with when I'm clearing out the veggie drawer in the freezer... but sometimes you just get sick of the same old thing and you that old saying 'variety etc...' and you just really fancy something different... if you're not a fan of making soup, here's range worth a try, I spotted them in the fridge section in Dunnes... The tubs are 400g, so you'd get two lunches with a low SP wrap... x

Super Soupfulls

I spotted these the other day in my local SuperValu on a pop up stand and thought I'd point them to see how Super they really were! I've tried the spicy butternut & red pepper one and it was really nice!

I know you can make it yourself for 0SP but there are so many people who don't have the time or even like making soup, so this could be a good alternative! The pouches are 350g so it's a good size portion, if you had it over 2 days was part of your lunch your lunch it would certainly keep you fuller for longer on these wintery days!

Anyone tried them yet?

Feel Good Soup...

I'm bored of making soup... no I am... I had this very conversation with my weigh-in buddy Mary in class last week... who would have thought we'd be craving salads in March!?!? 




You just get a bit fed up of the same thing over and over... so no more butternut squash for me till autumn! Sadly the weather isn't exactly on our side at the moment and soup is SO filling... I've raved about the Fusion & Street Soups before... All the points and flavours are >>> HERE<<< and ready made soup can be a life saver when you're just in the door and starving! Cauliflower & Broccoli Soup

Blimey… right you demanding lot! Here's the recipe for my version of cauliflower and broccoli soup as requested! Sorry I don't have the step by step pics but I wasn't expecting to do a post on it but it's VERY easy.. so here you go… 




What do I need?

onion
garlic
broccoli
cauliflower
Stock cube - I use chicken but there's some really nice ones out there now so experiment
500 mls of water
couple of table spoons of yoghurt
seasoning - salt, pepper & a dash of worcestershire sauce


For this I used left over veggies that had been steamed the night before so I added them last.. but if you're making it all from scratch here's how… 


How do I make it?

Fry your onion and garlic until soft with your spray oil… 

Add the broccoli and cauliflower (any extra veg too, celery is lovely in this!) and your stock.. your veggies should be covered so bring it to the boil, then simmer with the lid on until cooked… 

If you're using leftovers, then just add them at the end to heat them up or you'll just have mushy soup! I don't like my soup like baby food…. I'm a 'stew' kinda gal… 

Season as you go along as you fancy… the worcestershire sauce beefs it up a little.. try it … 

Once its done, I stir in a couple of tablespoons of fat free yoghurt.. currently using this one >>> HERE <<< it'll make it nice and creamy… I've also made this with creme fraiche and its lovely!


Total for the pot is 2PP, you could pro point it at 1PP per serving but even that is too high! Add some fancy wholegrain bread and you're stuffed for lunch!

I know.. 'you've already said the soup is great Doll, we get it' .. BUT.. just in case you get bored, and you will get bored.. here are 3 WW versions that might take the dull edge off it and my butternut squash recipe!

Asian-Inspired Zero ProPoints Value Soup

140g pak choi, chopped
150g Chinese cabbage, chopped
3 cloves garlic, minced
20g fresh ginger root, thinly sliced and julienned
100g oyster mushrooms
100g spring onions, chopped
140g canned water chestnuts, sliced
1 red pepper, thinly sliced
¼ tsp red pepper flakes
1440ml vegetable stock
70g beansprouts
200g mangetout
2 tbsp low-sodium soy sauce
25g coriander, finely chopped

Put pak choi, Chinese cabbage, garlic, ginger root, oyster mushrooms, spring onions, water chestnuts, pepper, red pepper flakes and vegetable stock into a large soup pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer, partly covered, for about 10 minutes. Toss in beansprouts and mangetout during the last 3 to 4 minutes of simmering. Add soy sauce and coriander. 


Italian-Inspired Zero ProPoints Value Soup

40g chicory, chopped
2 cloves garlic, minced
160g onions, chopped
30g baby spinach
2 small courgettes, cubed
1 medium red pepper, chopped
1 fennel bulb, thinly sliced
1440ml vegetable stock
800g canned chopped tomatoes
¼ tsp crushed red pepper flakes
2 tsp fresh thyme, finely chopped
1 tsp fresh oregano, finely chopped
¾ tsp salt
¼ tsp black pepper
25g fresh parsley, chopped
25g fresh basil

Put the chicory, garlic, onions, spinach, courgette, red pepper, fennel bulb, vegetable stock, chopped tomatoes, red pepper flakes, thyme and oregano into a large soup pot. Cover and bring to a boil over high heat. Reduce heat to low, and simmer, partly covered, for about 10 minutes.Stir in salt, black pepper, parsley and basil. Serve.



Mexican-Inspired Zero ProPoints Value Soup

200g sugar snap beans, cut into bite-size pieces
3 cloves fresh garlic, minced
2 small courgettes, cubed
120g tomatillos, chopped (optional)
1 jalapeno pepper, finely chopped
400g canned chopped tomatoes
25g green chilli
1 medium onion, chopped
1 medium green pepper, chopped
½ tsp cumin
1 tsp fresh oregano
1440ml vegetable stock
2 roasted peppers, pureed with …
1 Tbsp chipotle peppers in adobo sauce
¾ tsp salt
2 Tbsp fresh lime juice
25g fresh coriander, chopped

Put sugar snap beans, garlic, courgettes, tomatillos, jalapeno, chopped tomatoes, green chilli, onion, green pepper, cumin, oregano and vegetable into a large soup pot. Puree roasted peppers with chipotle in adobo sauce in a blender or food processor, and add to soup. Cover and bring to a boil over high heat. Reduce heat to low, and simmer, partly covered, for about 10 minutes. Stir in salt, lime juice and coriander.



Spicy Butternut Squash Soup

1 Butternut squash, peeled and diced
1 onion, diced
2 Cloves garlic, minced
2 chillis, deseeded and chopped
1 pint veg stock
1 teaspoon cumin
Pinch of smoked paprika

Fry the onion and garlic in fry light until soft. Add all the other ingredients and bring to the boil. Reduce heat and simmer for 10-15 mins. Whizz up in a blender and serve.
