Bank Holiday GIVEAWAY!

Because the weather has gone mental on us and the Bank Holiday looms... a little giveaway to cheer you up! 



The 'Cook it Your Way' is the latest cookbook from Weight Watchers, and I'm a bit smitten with it at the moment as it gives you a breakdown of the ingredients... there's a guide for Gluten Friendly recipes, High Carb, Low Carb, Veggies and all the Filling and healthy ingredients are (like the main books) highlighted in green... 







AND ... there's a table that lists every recipe via it's PP value, 
so if you only have 7 PP left... you can quickly see what you can whip up!




From breakkies to takeaways to desserts... there's a little something for everyone... 
well worth a look through if you're at a meeting! AND I've got one to  giveaway! So... *drumroll*

Knorr Flavour Pots

One of my fav condiments at the moment are the Knorr Flavour pots! The curry one is epic! Check out my 'Curry in a Hurry' recipe >>> HERE <<< 

These just add LOADS of flavour to your dishes, and variety is the spice of life yeah? Literally in this case! There's so many to choose from but the staples for me are the garlic and curry ones! These are all 0PP (they're all under 15cals per pot!) or 1PP for two, which you might need depending on what you're making! I use two in my curry but they're SO full of flavour... *drools*


Flavour Pot Garlic, 1 portion - 0PP

Flavour Pot Mixed Herbs, 1 portion - 0PP


Flavour Pot Mixed Chillies, 1 portion - 0PP

This one is great for stuffings in pork or chicken!

Handy for a quick stir fry without all the chopping!

Use 2 of these for a fab marinade on meat, it'll be 1PP for 2 pots
great for all the BBQs coming up!

Sticky Mango Chicken with a Lemon Potato Salad...


Ok so I'm a little but obsessed with the recipes in this book at the moment but I love cookbooks that show me what the final result should look like when I'm finished cooking... and you could really lick every page of this one! 



    

This week... Sticky Mango Chicken with a Lemon Potato Salad! The mango chutney in this recipe gives the chicken a fab sticky glaze... Plus any excuse to eat salad after the soup fest over the last few months yeah?! *drools* 

The only change I've made from the book is I used spray oil on my potatoes instead of olive oil... mine were left overs and just needed crisping up... 


Whats in it?

4 breasts of chicken - 16PP ... 4PP per portion

75g mango chutney - 8PP ... 1tsp = 1PP
500g baby potatoes - 10PP ... 2PP per portion
2 tbsp tomato puree - 1PP
   The recipe uses tomato ketchup I just prefer puree...

ZERO HEROS
Spray Oil
Ginger
Garlic
Chilli
Lemon, zest and juice
Salt'N'Pepper

Total ProPoints serving 4 - 35PP

Total ProPoints per portion - 9PP

How?





Warm up the oven to gas mark 6/200C/180c Fan ... If you're cooking your potatoes from scratch, par boil them first then spray with oil, season and get them in the oven... 



Lightly spray a non stick pan and pop your chicken in to cook... 
I've used chicken strips, same weight as 4 breasts 
but looks like so much more on your plate!




Assemble your goodies in a bowl... I had no fresh chilli so I used crushed ones... 



and give them a good mix... 




get your chicken onto some foil... 
then brush the mixture liberally all over... 



Then under the grill for 10 mins, glazing as you go... 







Once the coating starts to caramelise, you want it all sticky and sweet... 
start to assemble! 

Lots of salad leaves, your crispy baby spuds, the yummy sticky chicken 
and a squeeze of lemon juice... finger licking good I tell ya! 



Quite the feast for 9PP! 







Now to find someone to do the washing up eh?!

'Tropical' Eton mess





So the holiday blues are settling in and with the GLORIOUS weather I had to keep the tropical momentum going... so Eton Mess with a tropical twist... made in minutes and SOOOOOO good! 


Whats in it?

1 Meringue nest - 1PP per person

1 scoop of Vanilla ice cream
    I've used Vanilla & Coconut Dairy Free from Nobo for 2PP 
    but you can use your fav ice cream and if you want to keep the 
    Propoints even lower try the Zero PP banana ice cream

ZERO HEROS
Tinned pineapple in juice (NOT IN SYRUP!)
A squeeeeeze of Coconut Choc Shot
    I've only used a drizzle but if you use more you can PP like this... 
1 tsp, 5g - 0PP
2 tsp 10g - 1PP 
3 tsp 15g - 1PP
4 tsp 20g - 2PP


Total ProPoints for the recipe - 3PP
Total ProPoints per portion - 3PP

How?




Set up your glass of choice, I've gone all hipster with this one... 


If you're not using fresh pineapple, drain your tinned and save the juice for a smoothie!


Pop it into your glass... 


Get your meringues... 



Layer them on top...  see what I mean by easy!


Top off with your ice cream, yoghurt etc... 


And a squeeze of Coconut Choc shot... et voila!




I squeezed my choc shot on top but if you wanna get all fancy pants... 
drizzle it down the sides before you start layering 
and you'll get some in every mouthful! 

A shot of rum wouldn't be a bad idea either! ahem...

Steak with creamy gratin...

This weeks recipe is... Steak with creamy mushroom gratin with roasted sweet potatoes! 




I've adapted this slightly from the New Weight Watchers Book 'Cook it your way!' (which FYI is in the Easter Bunny Winners pack! I KNOW!!!) They've used butternut squash chips so in total its only 6PP per portion but I treated my guests to sweet potatoes! The recipe is 24pp in total ... 36PP for using sweet potatoes... and it serves 4 people... and when you get in the mood for a steak, this is a easy and flavourful way to do it! 



Whats in it?

400g steak - 16PP (4PP per portion)

400g sweet potatoes - 12PP (3PP per portion)
   If you want to save 3PP per serve, roast butternut squash instead...
4 Laughing Blue Cheese triangles - 4PP (1PP per portion)
2 tbsp half fat creme fraiche - 2PP

ZERO HEROS
Spray Oil
Broccoli 
Mushrooms
Yellow pepper (I only did peppers because someone doesn't like mushrooms weird right!?)
Garlic
Paprika
Mustard
Tarragon

Total ProPoints for the recipe - 36PP
Total ProPoints per portion - 9PP

How?


Cut your sweet potato in half, spray lightly with spray oil and season with smoked paprika... Warm up the oven to gas mark 6/200C/180c Fan... They will take about 40 minutes depending on your oven but poke them with a fork, once they're soft they're done...  







Wash and chop your broccoli and pop it in your steamer ready to go... 



Chop your mushrooms...


Spray your pan with low cal oil.. and lightly fry them until they're soft... 


Pop them in a bowl to cool...



In a separate bowl...





Separate your egg... 


Add your 2 tbsp of creme fraiche... 
Tesco Half Fat is the best 'light' one I've come across to date...






A teaspoon of wholegrain mustard... 



add your garlic and tarragon... 



 and give it a good stir... 




Stir your mushrooms into the mix... 



Check your sweet potatoes and pop on your broccoli! 



Using the same pan you did the mushrooms in... seal your steaks on both sides... 



Then on your grill... assemble your steaks with the mushroom mixture on top 
and top each one off with a triangle of Laughing Cow Cheese... 





Pepper version for the awkward guest! 



The pop it under the grill for no more than 5 mins whilst your broccoli is steaming! 




Et voila! Steak with mushroom gratin for 9PP!




and for the 'shroom haters...
