RECIPE - Breakfast muffins
Sometimes you come across a recipe that is juuuuussstt right! Well I discovered this from a fellow WW gal "Lady Lainy" .. check out her blog below! She adapts recipes to make them more propoint friendly and yet still stay delicious! I make these muffins ALL the time.. and add all kinds of fruit to them.. they are SUPER filling and would challenge a bowl of porridge any day! I point them as 4 but she's done even better on her blog and got them down to 3PP! PLUS they are super fast to whip up... Doll x
Breakfast Muffins

100ml Skimmed Milk
100g self raising flour
1 egg
60g wheat bran
60g soft brown sugar (silverspoon do a reduced calorie soft brown sugar)
125g of blueberries/cranberries/raspberries (any 0pt fruit)
Spices if you fancy - nutmeg, cinnamon, ginger...
Servings - 6
Recipe - 22 PP
Per serving - 4 pp
1. Preheat oven to 190˚ - gas mark 5
2. Put milk and wheat bran in a bowl, stir well & soak for 10 mins
3. Beat the sugar and egg until well combined then beat in the bran mixture
4. Sift the flour, spices, fold in gently, but thoroughly, with a metal spoon in a figure of eight motion
5. Stir in the berries, fold evenly into the mixture
6. Divide between six muffin cases
7. Bake in preheated oven for 20 mins or until the muffins are risen & firm to the touch
8. Cool on a wire rack then store in airtight tin or fridge

They look good, will have to try the recipe...I may try oat bran instead of wheat bran....have you tried that?
