A better me!


So a couple of weeks ago I made the trip to Limerick to visit the Weight Watchers Leader of the Year!
Now I've been following (not literally!) Verette on Facebook and on her website for years now! She's all about the healthy eating, throwing in the ProPoints of everything as you go along... it was a FANTASTIC afternoon and if you get the chance, fancy a mini road trip (I'm in!) or are just passing through, check out her site to see if there are any classes on... With summer coming I was lucky to be in on the 'Summer Salads' class with some others, a couple of them some gold members from Verettes Weight Watchers class...







Tea and coffee to set us up before kick off and her kitchen is basically the 'Bake Off' tent but not a tent! ALL the pink and my friends will vouch for my adoration of ANYTHING pink! Its just a lovely spot to chill out in and watch a chef doing their stuff up close and personal... plus, you can ask as many silly questions as you like... 


First up we had a fruity amuse bouche... proper palette cleansing, whilst she put some chicken on the go for the salads... 


Melon, redcurrant, strawberry, mint all nice and cold! 



with the smell of zucchini and olive bread in the kitchen over in the 'here's one I made earlier' corner! 




In total, she made the bread, two simple but delicious dressings, and four salads in two hours with all us interrupting and quizzing her! Simple healthy food... fast!


The dressings were Honey Poppy seed dressing which was creamy, and a lemon herb dressing which was my fav! 




HONEY POPPY SEED DRESSING

Whats in it?

100 mls of light mayo - 7PP  
   I use the Aldi one... it's 3tbsp for 1PP 
50mls of honey - 3PP  50ml is 3 tbsp 
1 tbsp of yellow mustard - 0PP
1 tbsp of seeds - 2PP
Salt'n'pepper

How?
Mix is all up well and ta da! THAT simple! 

Total ProPoints - 12PP
It will last for 3 - 4 days in the fridge...







All set with the induction hob... 


First up we had Bang Bang Chicken... 





Some new healthy alternatives to making a peanut sauce! 




Can we please note the cucumber was cut into little stars, not just for out entertainment but because it's the skin that people have problem digesting! AND it makes the salads look cuter! 


Then we had, Asian Chicken Salad... this was my fav on the day! So simple and so tasty!





Followed by Dundrum Pear and Walnut Salad... I mean it's from Dundrum.. I HAD to try it! 





Then the hob was on for Verette's Prawn Pil Pil...  by the time she got to these we were all salivating! and the smell of chilli and garlic was AMAZING! 








Et voila! Lunch was served! 


She also made a 'tomato and basil' crumble but I was too busy hoovering the salads to take a pic 
but these will all be up on her site soon! 




I'm not going to mention the washing up... ahem... Moving on...
